When life gives you lemons, why not make lemon cakes?

When life gives you lemons (and it is tea time) why not make lemon cakes? Tea time needs to be fun and tasty, especially if you’re entertaining. So here’s a super easy and quick way to entertain and impress your guests with a bite size treat that is high in flavour and sophistication. Suitable for a kiddie party or a kitty par-tea, whip up these tasty treats and your party will be the most talked about ever!

Moist Tea Lemon Cakes

What you’ll need?

For the cupcakes

  • 1.5 cups of softened butter

  • 1 pack cream cheese

  • 2.5 cups sugar

  • 6 eggs

  • 3 tablespoons lemon juice

  • Zest of 1/2 a lemon

  • 1 teaspoon vanilla essence

  • 3 cups of flour (maida)

 

For the glaze

  • 5 and a 1/4 cups of castor sugar

  • 1/2 cup whole milk

  • 2 teaspoons lemon extract

 

How to make:

  1. In a large bowl mix, butter, cream cheese and sugar until light and fluffy. Add in eggs, one at a time and beat/whisk well. Mix in lemon juice, vanilla essence and lemon zest. Finally add in the flour and mix until nice and moist.

  2. Fill in silicone cupcake moulds until two thirds and bake in a preheated oven at 325° F or 160°C for around 15 to 20 minutes. Remove when the tops of the mixture have risen and are a golden brown.

  3. For the glaze combine all the ingredients in a bowl and and ladle on top of your cooled cupcakes.

  4. This measurement makes around 102 cupcakes. You may vary the measurements depending on your need.
