Tea time is the perfect time to indulge in this lovely little treat. An English staple, the cucumber sandwich is a venerable institution at a high tea. Here’s the simplest possible way to make the perfect open cucumber sandwich.
- 6 slices of white bread (cut into circles with a cookie cutter)
- 100 grams butter
- Chives or spring onion stalks diced
- 1 cucumber, sliced in a circular fashion

Mix the chives or finely chopped spring onion stalks with the butter.Step 2.
Spread the mixture onto the circular white bread.Step 3.
Top with a slice of cucumber and enjoy.
Now if you really want to jazz up this ‘pukka’ British tea staple, consider a few additional toppings like paprika, aamchoor (dried mango powder) or chaat masala. You could add these to the butter and chive mixture for that extra little kick of flavour.
